How much to charge for dinner rolls

Charge about $17.77 for a dozen baked on its own and $17.00 for a dozen cut from a pan that sells out, and about $11.58 a dozen when you bake 10 dozen for one pickup day. Those are this page's worked examples at a 40% margin. A pan of 16 rolls costs $2.32 in ingredients, and the ingredients are the small part: 31 minutes of work at an example $15 an hour is $7.75. The prices are examples, so put in your own.

What other price lists show

I found no list of dinner roll prices that I could open and check, so this page gives you one anchor and leaves the rest to your local market. The Homegrown bread guide (a seller-platform blog) draws on 206 bread listings it pulled on September 18, 2026. Its advice for rolls is to sell them by the pack, in packs of 4, 6 or 8, so the total lands in the same $8 to $15 range as a loaf. Homegrown gives this rule for loaves; it published no roll counts. A pack of 4 to 8 rolls is not a dozen, so compare per roll: $1.42 a roll here for a dozen cut from a pan, $0.97 a roll in the 10 dozen order. A pack of 6 at those prices is $8.52 and $5.79, so the example sits around the top of that range and lower in a big bake, because it pays for the baker's hours.

The recipe, ingredient by ingredient

King Arthur's Soft Dinner Rolls make 16 rolls of about 45 g each in a greased 9 x 13 inch pan. The page lists 23 minutes of hands-on time, a first rise of 1 to 2 hours, a second rise of about an hour and 20 to 22 minutes in a 350°F oven. The amounts below are the recipe's gram weights. Flour, sugar, butter and milk use September 2026 averages from the Bureau of Labor Statistics. Yeast, potato flour and salt carry a star: those are my own placeholder prices. The recipe's yeast is 2 1/2 teaspoons, which I count as 1.11 packets of 2 1/4 teaspoons. The 71 g of lukewarm water is tap water and has no cost line.

IngredientUsedPackageCost
Instant yeast (one 2 1/4 tsp packet) 1.11 each $0.60 / 1 each* $0.67
Granulated sugar 39 g $1.02 / 1 lb $0.09
Table salt 8 g $1.29 / 26 oz* $0.01
All-purpose flour 360 g $0.55 / 1 lb $0.43
Potato flour 46 g $5.49 / 16 oz* $0.56
Whole milk 170 g $4.11 / 1 gallon $0.19
Butter 43 g $3.96 / 1 lb $0.38
Ingredients for the batch$2.32

Labor is 31 minutes: the recipe's 23 hands-on minutes plus 8 of my own for bagging and cleanup. The rises and the bake are not paid time. Each roll gets a bag and a label, which I put at $0.10 as a placeholder. The overhead line is 10%, an example you should replace with your own. Open this pan in the calculator to change any line.

From cost to price

One pan of 16 rolls
LinePan of 16Per roll
Ingredients$2.32$0.15
Bags and labels (placeholder)$1.60$0.10
Labor (31 min at $15, example)$7.75$0.48
Overhead, 10%$1.17$0.07
Cost to make$12.84$0.80
Price at a 40% margin$21.40$1.34

Ingredients are 18% of the cost to make a pan. Labor is 60%. A cheaper bag of flour changes the price by cents, and an hour you do not charge for changes it by dollars. Margin and markup are different numbers, see markup vs margin for bakers.

A dozen or a pan of 16

The recipe fills the pan with 16 rolls, so a dozen is three quarters of it. Customers think in dozens, and a pan of 16 or 24 is a way to sell the whole bake. Each price below is the per-roll price from the table above times the count, rounded up to a whole dollar, with the margin it leaves.

The same rolls sold three ways
Sold asCost to makePricePer rollMargin kept
A dozen (12)$9.60$17.00$1.4243.5%
A pan (16)$12.80$22.00$1.3841.8%
Two dozen (24)$19.20$33.00$1.3841.8%

These prices assume the other rolls from the pan sell too. A dozen baked alone carries the whole bake's setup and cleanup, so it costs more: $17.77 in the pre-order table below, against $17.00 here. Selling a pan of 16 for $22.00 keeps about the same margin as two dozen at $33.00. The dozen costs a little more per roll because the rounding to a whole dollar has fewer rolls to spread over.

Pre-orders for one pickup day

For Thanksgiving, which is Thursday, November 26 in 2026, most of the work comes before the day: you take orders, bake once, bag and hand over. Labor per dozen falls with the size of the bake because setup and cleanup are paid once. My model is 15 minutes of setup and cleanup for the bake day plus 12 minutes a dozen for shaping, panning, bagging and labeling. The 12 minutes a dozen is my estimate and not the recipe's, so replace it with a timed run of your own. Ingredients scale straight up with the rolls.

One bake day at a 40% margin, $15 an hour (example)
OrderPans of 16LaborLabor per dozenCost per dozenPrice per dozenOrder total
1 dozen127 min$6.75$10.66$17.77$17.77
5 dozen475 min$3.75$7.36$12.27$61.36
10 dozen8135 min$3.38$6.95$11.58$115.84

Labor per dozen drops from $6.75 to $3.38, so the price per dozen drops from $17.77 to $11.58 at the same margin. The one-dozen row bakes three quarters of a pan, and it is the price to quote for a single dozen with nothing else in the oven. If you take the same order inside a bigger bake, the pan prices in the section above apply. Ten dozen is 120 rolls, or 8 pans to bake. The ingredients are costed for 7.5 pans of rolls, because that is how many 120 rolls make. With two pans in the oven at a time that is four loads of 20 to 22 minutes (my arithmetic), so check your oven and your rising space before you set a cap on orders. Shaped rolls rise for an hour, and the dough has to be ready when the oven is free.

A discount for a big order is easiest to give from this table: the 10 dozen price is the lowest one that still keeps the 40% margin. The cinnamon rolls page has a different pre-order table, for a sweet roll sold by the box. Selling pies too? The pumpkin pie page has a 30-pie Thanksgiving batch.

What the butter price does

Butter is 16% of this pan's ingredient bill. The recipe uses 3 tablespoons (43 g). Some recipes brush the tops with melted butter when the rolls come out. This one does not say to, so the second column is my optional addition of 2 tablespoons (28 g), for 71 g in all. The table prices a dozen at four butter prices per pound. The $3.96 row is the September 2026 average from the Bureau of Labor Statistics. The other three are placeholders.

A dozen at a 40% margin, before rounding
Butter per lb43 g: cost43 g: price71 g: cost71 g: price
$2.50$9.52$15.86$9.64$16.07
$3.96$9.63$16.05$9.83$16.39
$5.50$9.75$16.25$10.03$16.72
$7.00$9.87$16.45$10.23$17.04

Going from the cheapest to the dearest butter changes a dozen by $0.59 with the recipe's amount, and by $0.97 with the brushed tops. A roll recipe is not very sensitive to butter, so there is little reason to re-quote an order when the dairy aisle changes. Cottage food rules decide whether you may sell yeast breads at home and how to label them, so check your state's before you take orders.

A savory bread priced by the loaf is on cost of a loaf of sourdough. A table of single, half-dozen and dozen prices is on the bake sale price list builder. More Thanksgiving tables: apple pie and pie prices: whole, slice and mini.
