How much to charge for banana bread and muffins

One batch of King Arthur's banana bread batter costs $7.53 in ingredients. Sold as one loaf, the batch costs $17.19 and the price at a 40% margin is $28.65. Split into 6 mini loaves it brings $43.50, and as 12 muffins $41.30. The batter is the same; the pieces, the packaging and the minutes per piece change the price. The tables below show each format and what a smaller piece should cost compared with an even share of the loaf.

What one batch costs

King Arthur's banana bread makes one loaf in a 9 x 5 inch pan, with 20 minutes of hands-on time and 1 hour 10 minutes in a 325°F oven. I included the optional jam and walnuts. The bananas are priced at the BLS September 2026 average per pound with the peel on: 1 1/2 cups mashed is 340 grams, and my arithmetic says that is about 1 1/8 pounds as bought. Labor is the 20 minutes plus 10 of mine for wrapping and labeling. Flour, eggs and bananas use the U.S. averages from the BLS, and butter uses its own BLS series; stars mark my placeholder prices.

Walnuts are 23.3% of the ingredient bill and honey 18.2%, while the bananas are 9.8%. Both prices are my placeholders. Leaving out the optional walnuts and jam brings the batch to $5.11 of ingredients and the loaf price to $24.23. Open the loaf in the calculator to swap in your own prices.

One batter, three ways to sell it

The batter weighs about 1,200 grams, roughly 4 1/2 cups. That fills 12 muffin cups at a heaped third of a cup, or six mini loaf pans at three quarters of a cup. These piece counts are my arithmetic, not the recipe's; King Arthur's banana muffin recipe uses the same 1 1/2 cups of mashed bananas for 12 muffins, which fits. Extra minutes per piece (scooping, greasing, wrapping each one) and the packaging per piece are also my picks. Margin is 40% in every row.

Six mini loaves6$0.4554$4.35$7.25$43.50
Twelve muffins12$0.2548$2.07$3.44$41.30

A customer at a market may not pay $28.65 for a loaf. The batter brings $12.65 more as muffins than as one loaf, because the extra packaging and minutes are paid for in the price of each piece. Whether your customers buy at those prices is a separate question; the calculator only shows what covers your costs.

Smaller pieces cost more than their share

Split the loaf price evenly and a mini loaf would be one sixth of it. The table compares that even share with the price each format needs once its own packaging and minutes are counted.

One seller's prices

A baker on The Fresh Loaf's pricing thread asked whether prices for a first farmer's market were reasonable: $4.00 for a mini loaf, $8.00 for a full loaf, and for muffins from the same batter $3.00 each, 2 for $5.00, or $25.00 a dozen. These are one person's proposed prices, not sales, and the thread doesn't say what the recipe costs them.

One reply points out that you may get 32 minis or 16 loaf cakes from the same batter, but that doesn't mean the minis should cost half: there is more packaging, labeling and cleaning for 32 items than for 16, so a smaller size should be a little more than half of the bigger one. The numbers above say the same thing. At $25.00 a dozen, the muffins come to $2.08 each, and this page's cost for a dozen is $24.78. Whether that is a problem depends on your own ingredient prices and hourly rate, so put them in before you copy anyone's price list.

Selling by the dozen? Look at the cupcake cost per unit page for how frosting and liners add up, or at cookies per dozen. A loaf that sells for time more than for ingredients is on the sourdough page, and markup vs margin explains the gap between 40% on top of cost and a 40% margin.
