Cupcake cost per unit

One frosted cupcake from King Arthur's birthday cupcake recipe costs about $0.50 in ingredients, and $1.82 once you count a box, an hour and a half of work and overhead. The frosting costs about twice as much as the cake under it.

The batch

King Arthur's Classic Birthday Cupcakes make 28 cupcakes and list 1 hour of hands-on time. The chocolate frosting from the same page is included. Milk, butter, eggs, sugar and flour use September 2026 averages from the Bureau of Labor Statistics. Cocoa, confectioners' sugar, vanilla, oil, salt and baking powder carry a star: those are my own guesses for a store-brand package, so check them against what you pay.

Cake vs frosting

Cake, per cupcake
$0.16
$4.55 a batch
Frosting, per cupcake
$0.33
$9.36 a batch

Most of the frosting cost is 284 g of butter, 681 g of confectioners' sugar and 126 g of cocoa. The cake itself leans on flour and sugar, which are cheap. If you sell plain and frosted cupcakes, price them separately: a swirl this size more than doubles the ingredient cost. Vanilla is a hidden line too, with two and a half tablespoons across cake and frosting coming to $3.75 at my placeholder price.

What the box does to the price

Packaging is per cupcake, so it scales with every sale. Here is the same batch with three kinds of packaging, still with 90 minutes of work at an example $15 an hour, 10% overhead and a 40% margin.

Packaging per cupcakeCost eachPrice eachPrice per dozen
$0.10 (liner only)$1.54$2.57$30.81
$0.35 (liner + shared box)$1.82$3.03$36.31
$0.75 (single clear box)$2.26$3.76$45.11

The packaging prices are my round examples. Count yours by dividing the price of a pack by the number in it.

Your own cupcakes

Yield is the number to get right. A recipe that says 28 can give 24 if you fill the liners higher, and every cupcake you lose raises the cost of the rest. Price on the number that came out of the oven.

Open this batch in the calculator to change prices, yield or margin, then print the cost sheet. For a recipe without frosting, the cookie example works the same way. For a whole cake priced by the slice, see the 6 inch cake page. Margin and markup are explained on the markup vs margin page.
