How much to charge for a pumpkin roll

One pumpkin roll costs $26.90 to make in this example. At a 40% margin that rounds to $45.00 for the whole roll, $25.50 for a half and $5.00 for a slice (14 to a roll). A yule log, which is also a rolled sponge cake, costs $25.08 and rounds to $42.00 whole. Both tables below show the work, so swap in your own prices.

What one pumpkin roll costs

The quantities come from a Libby's pumpkin roll recipe on insanelygoodrecipes.com (opened October 23, 2026). It uses one 15 x 10 inch jelly roll pan and serves 14. The page lists optional walnuts, which are left out here. Libby's own recipe page would not load for me, so check the amounts against the label of the can you buy. The 2/3 cup of pumpkin is priced as about 163 g, my arithmetic from roughly 245 g a cup. Labor is 60 minutes: the recipe's 45 minutes of prep plus 15 of my own for chilling, wrapping and boxing. Eggs, flour, sugar and butter use the September 2026 U.S. averages from the BLS. Everything with a star is my placeholder price.

One recipe makes one roll. The batter spreads across the whole pan, so doubling it for a second roll needs a second pan and a second bake. Costs and minutes both scale with the number of rolls, and there is no cheaper second roll the way there is with a tray of cupcakes. Open this roll in the calculator to change prices or add rows.

The cream cheese filling is the expensive half

The 8 oz of cream cheese costs $3.00. With the butter and confectioners' sugar, the filling is 59.3% of the ingredient bill, while the cake itself (flour, eggs, sugar, pumpkin and spices) is the rest. When cream cheese goes on sale before Thanksgiving, the roll gets cheaper by more than a sale on pumpkin would do. Shop for the cheese first, then the rest.

The price ladder: whole, half and slice

Each row sells the same roll, so the ingredients stay at $6.96. A half needs a cut, wrapping and its own box, and a slice needs a clamshell and a few minutes at the counter. The price is cost divided by 0.6 (a 40% margin), then rounded up to the next 50 cents. A roll yields 14 slices on the recipe page, and the slice row below uses that count.

SizePer rollCost eachPrice at 40%RoundedMargin keptRoll total
Whole roll1$26.90$44.84$45.0040.2%$45.00
Half roll2$15.10$25.17$25.5040.8%$51.00
Slice14$2.72$4.53$5.0045.6%$70.00

Packaging per unit is $2.50 whole, $1.50 per half and $0.40 per slice, with 0, 5 and 2 extra minutes each. Those are my picks. Selling all 14 slices brings $70.00, which is 156% of the whole-roll price.

Freezing for holiday orders

The recipe page says the roll can be frozen for up to 2 months, wrapped whole or by the slice in plastic wrap and a freezer bag, then thawed overnight in the refrigerator. That lets you bake on a quiet weekend in October and deliver the week of Thanksgiving. Ten rolls cost $269.00 at the full per-roll figure above, and sell for $450.00 at $45.00 each, which leaves $181.00. That assumes no discount for baking in bulk and no freezer space cost, so adjust both. Also check whether your state's cottage food rules allow a cream cheese filling at all, since many treat it as a food needing refrigeration.

A yule log is the same idea in chocolate

A yule log (bûche de Noël) is a sponge baked flat, spread, rolled and covered. King Arthur's Easy Bûche de Noël (opened October 23, 2026) bakes in a half-sheet pan with 40 minutes of hands-on time and a ganache of chocolate, cream and butter. The page lists no servings, so I cut it into 10 slices. The confectioners' sugar for the towel has no amount on the page and is left out. Labor is 55 minutes, the 40 plus 15 of my own for scoring the bark and boxing. Chocolate and cream push this one's ingredients to $6.55, against $6.96 for the pumpkin roll.

Yule log (King Arthur Easy Bûche de Noël), one roll, 10 slices

Semisweet chocolate (ganache) 170 $3.49 / 12 * $1.74

The same ladder, with the same packaging and minutes per unit:

SizePer logCost eachPrice at 40%RoundedMargin kept
Whole log1$25.08$41.81$42.0040.3%
Half log2$14.19$23.65$24.0040.9%
Slice10$3.22$5.37$5.5041.5%

The whole log at $42.00 is $4.20 a slice when sold in one piece. Cut and sold by the slice at $5.50, the same log brings $55.00. Open the yule log in the calculator.

What bakeries listed

I found no pumpkin roll price on a page I could open, so there is no market column for it here. For the yule log, a Time Out Los Angeles roundup from December 19, 2016 lists one bakery's bûche at $20 (mini, 2 to 3 servings), $50 (small, 6 to 8) and $85 (full, 14 to 16). Another bakery's 10 inch log was $42 and a third listed $68. That is one city, one bakery's tiers and a decade-old article, so treat it as a rough shape. Per serving those tiers work out as follows.

SizeListed pricePer serving
Small, 6 to 8 servings$50.00$6.25 to $8.33
Full, 14 to 16 servings$85.00$5.31 to $6.07

The example log at $42.00 and 10 slices comes to $4.20 a serving, so it sits inside or below the 2016 small tier's $6.25 to $8.33, before any inflation since then. Your cost is the number that decides it.

More

Half and whole prices for a baked dessert in a different shape are on the pie price ladder, and the filling-and-crust costs of the pie that shares this season are on the pumpkin pie page. For selling single pieces at a table, the bake sale price list builder turns a cost per slice into a price list. Margin and markup are different numbers; markup vs margin for bakers has the conversion.
